What is Ceylon Cinnamon? A tropical evergreen tree, Ceylon Cinnamon or Cinnamomum verum, also known as the True Cinnamon, differs in texture, taste and aroma from the widely used Chinese cinnamon or cassia. Harvested from shoots, the tougher outer bark is scrapped off, leaving the softer, lighter-coloured, sweeter-tasting inner bark. The bark is dried and rolled into quills, or can be easily ground into powder or further processed to extract the volatile oils.
